AI Bits for Healthy Bites
Our AI Bits for Healthy Bites project aims to change the way we look at food, nutrition and health. We make the nutritional value of fresh produce measurable “from seed to fork” using breakthrough AI technology. With 84% of people globally concerned about healthy nutrition, the project responds to growing demand for verifiable, high-quality nutritious food.
Three partners lead the initiative:
GrwNxt develops and validates AI models that predict nutrient content and development in crops by linking real-time measurements to nutritional data, both now and predicted at harvest. These models enable Dynamic Digital Recipes (DDR®) that optimize plant growth for higher nutrient density.
Koppert Cress/DivisionQ, a global leader in sustainable horticulture, tests how AI can be integrated into normal greenhouse operations to achieve better nutritional yields and quality while enabling measurable, label-based nutrient transparency for consumers.
Defence/Paresto applies the nutrient-rich crops in healthy, appealing meals for the armed forces, civilian staff and inpatients. Collaborating with Defense’s Nutrition and Dietetics department, we study the effects of nutritious plant-based diets on vitality, health, and deployability, with potential implications for healthcare, sports, and hospitality sectors.
Together, the partners aim to transform the food chain by validating AI-driven nutrition optimization. The project positions West Netherlands as a leading testbed for sustainable, AI-driven food systems that combine economic growth with societal and health benefits.
